- ½ tsp (2.5ml) Chili Powder: Mild heat and complexity.
- Salt and Black Pepper to Taste: Enhances all flavors.
- 150g (1 cup) Corn Kernels: Adds sweetness and texture.
- 100g (1 cup) Cooked Black Beans: Protein, fiber, and earthy flavor.
- 250g (1 cup) Masa Harina: Key ingredient for the crust.
- 240ml (1 cup) Warm Water: Hydrates the masa harina.
- ½ tsp (2.5ml) Salt for Crust: Enhances crust flavor.
- 150ml (⅔ cup) Heavy Cream: Provides richness to the sauce.
- 1–2 Chipotle Peppers in Adobo, Minced: Smoky heat and flavor.
- 1 tsp (5ml) Adobo Sauce: Adds depth to the sauce.
- 100g (1 cup) Shreddar Cheddar Cheese, plus 30g (⅓ cup) for Topping: Sharp, savory flavor.
- 2 tbsp (30g) Toasted Corn Kernels: Adds crunch and nutty flavor.
- 2 tbsp (8g) Fresh Cilantro, Chopped: Fresh, herbaceous note.
- Juice of 1 Lime: Brightens the flavors.
Instructions
- Preheat & Prepare: Preheat oven to 190°C (375°F) and grease a 23cm (9-inch) pie pan.
- Make Masa Crust: Combine masa harina, warm water, ½ tsp salt, and 1 tbsp oil; stir until pliable.
- Press Crust: Press dough evenly into the pie pan, creating a thin crust.
- Par-Bake Crust: Bake crust for 10 minutes until set.
- Sauté Aromatics: Sauté onion until translucent, then add garlic until fragrant.
- Brown Beef: Brown ground beef, drain excess grease.
- Spice Beef: Stir in cumin, paprika, chili powder, salt, and pepper.
- Add Corn & Beans: Mix in corn and black beans; cook for 2 minutes.
- Make Chipotle Sauce: Simmer cream, chipotle peppers, adobo sauce, and 100g cheddar until thickened.
- Assemble Pie: Spread beef filling over the crust.
- Swirl Sauce: Drop spoonfuls of chipotle sauce and swirl into filling.
- Final Bake: Sprinkle with remaining cheddar and bake for 25-30 minutes.
- Rest & Garnish: Rest for 10 minutes; garnish with toasted corn and cilantro.
Notes
For best results, use high-quality halal ground beef and avoid overbaking the crust. Adjust chipotle pepper amount to your spice preference.
