Description

This cozy Three Cheese Tomato Bruschetta Dip bakes to gooey perfection. Perfect for game nights, it features tomatoes, garlic, basil, and three cheeses.

Ingredients

Scale
  • 2 cups (approx. 400g) Diced Tomatoes
  • 3 cloves, minced (or 1 tbsp pre-minced) Garlic
  • 1/4 cup, chopped Fresh Basil
  • 1 cup, shredded (approx. 110g) Mozzarella Cheese
  • 1/2 cup, grated (approx. 50g) Parmesan Cheese
  • 4 oz (113g), softened Cream Cheese
  • 2 tbsp Olive Oil
  • Salt and freshly ground black pepper to taste Seasonings

Instructions

  1. Prep Your Ingredients: Begin by finely chopping your fresh tomatoes (or draining canned ones thoroughly). Mince your garlic cloves and finely chop the fresh basil. If not using pre-shredded, shred your mozzarella and parmesan cheeses.
  2. Mix the Tomato Base: In a medium bowl, combine the diced tomatoes, minced garlic, chopped fresh basil, olive oil, salt, and pepper. Stir gently to combine all the delicious flavors.
  3. Assemble the Dip: Take a 9-10 inch oven-safe skillet (or an 8×8 inch baking dish). Spread the softened cream cheese evenly across the bottom. Carefully spoon the tomato mixture over the cream cheese layer. Finally, sprinkle generously with the shredded mozzarella and grated parmesan cheese.
  4. Bake to Golden Perfection: Preheat your oven to 375°F (190°C). Place the skillet in the preheated oven and bake for 20-25 minutes. You’ll know it’s ready when the edges are bubbling vigorously, and the cheese on top is beautifully melted and golden brown.

Notes

  • For a lighter take, consider low-fat cream cheese or serving with a fresh whole wheat baguette.
  • Sneak in a handful of chopped spinach with the tomatoes for added greens and nutrition.
  • Use pre-minced garlic and pre-shredded cheese for quick shortcuts on busy weeknights.
  • For a low-carb option, serve with crisp fresh veggie sticks like cucumber, bell pepper, or celery.
  • Using organic ingredients whenever possible can enhance the overall flavor profile.
