- 300g (10.5oz) Ripe Tomatoes, Diced
- 2 Large Garlic Cloves, Minced
- 2 Tbsp (30ml) Extra-Virgin Olive Oil
- 1 Tbsp (15ml) Fresh Lemon Juice
- 1 tsp (5g) Sea Salt
- ½ tsp (2.5g) Freshly Ground Black Pepper
- 150g (5.3oz) Roasted Red Bell Pepper, Chopped
- 1 tsp (2g) Smoked Paprika
- 100g (3.5oz) Cream Cheese, Softened (Halal-Certified)
- 2 Tbsp (30ml) Balsamic Reduction
- 1 Tbsp (15ml) Fresh Basil Leaves, Chopped
Instructions
- Preheat & Prepare: Preheat oven to 180°C (350°F).
- Combine Cheeses: Mix mozzarella, cheddar, and Parmesan.
- Marinate Tomatoes: Toss diced tomatoes with garlic, oil, lemon juice, salt, and pepper.
- Make Red Pepper Swirl: Blend roasted pepper, paprika, and cream cheese.
- Assemble Dip: Layer cheese, tomatoes, and red pepper swirl.
- Swirl & Top: Swirl red pepper into tomatoes and top with remaining cheese.
- Bake: Bake for 15-20 minutes until bubbly and golden.
- Rest & Serve: Let rest for 5 minutes, drizzle with balsamic reduction, and garnish with basil.
Notes
For best results, use freshly shredded cheese and ripe tomatoes. Allowing the tomato mixture to rest enhances the flavors.
