Ingredients

  • 2 round sponge cakes or 1 large sheet cake, baked and cooled
  • 1 cup strong espresso or brewed coffee (or decaf), cooled
  • 1 tbsp sugar (optional)
  • 1 cup heavy whipping cream, chilled
  • 1 cup mascarpone cheese
  • ½ cup sugar
  • 1 tsp vanilla extract
  • Unsweetened cocoa powder, for dusting
  • Chocolate shavings, optional garnish
  • Fresh strawberries or raspberries, optional garnish

Instructions

  1. Bake or Prepare Cake Layers: Use sponge cake, pound cake, or ladyfingers. Cool completely before layering.
  2. Make the Coffee Soak: Mix espresso or coffee with sugar (optional), then let cool to room temperature.
  3. Whip the Cream Layer: Beat whipping cream, mascarpone, sugar, and vanilla until thick and smooth.
  4. Assemble the Cake: Layer cake with coffee soak and mascarpone cream. Repeat. Chill for at least 6 hours.
  5. Dust and Decorate: Sift cocoa powder on top and add optional garnishes like chocolate or berries.

Notes

  • Substitute mascarpone with full-fat cream cheese if needed.
  • Use decaf coffee and skip alcohol for a halal version.
