- 2 round sponge cakes or 1 large sheet cake, baked and cooled
- 1 cup strong espresso or brewed coffee (or decaf), cooled
- 1 tbsp sugar (optional)
- 1 cup heavy whipping cream, chilled
- 1 cup mascarpone cheese
- ½ cup sugar
- 1 tsp vanilla extract
- Unsweetened cocoa powder, for dusting
- Chocolate shavings, optional garnish
- Fresh strawberries or raspberries, optional garnish
Instructions
- Bake or Prepare Cake Layers: Use sponge cake, pound cake, or ladyfingers. Cool completely before layering.
- Make the Coffee Soak: Mix espresso or coffee with sugar (optional), then let cool to room temperature.
- Whip the Cream Layer: Beat whipping cream, mascarpone, sugar, and vanilla until thick and smooth.
- Assemble the Cake: Layer cake with coffee soak and mascarpone cream. Repeat. Chill for at least 6 hours.
- Dust and Decorate: Sift cocoa powder on top and add optional garnishes like chocolate or berries.
Notes
- Substitute mascarpone with full-fat cream cheese if needed.
- Use decaf coffee and skip alcohol for a halal version.
- Store in the fridge for up to 4 days or freeze for up to 2 months.
