  • 2 each 1-inch thick, 8-10 oz (225-280g) top sirloin steaks
  • 4 Tbsp (56g) unsalted butter
  • 3 cloves garlic, minced
  • 2 sprigs fresh rosemary
  • 4 sprigs fresh thyme
  • 1 Tbsp (15ml) olive oil (or avocado oil)
  • 0.5 tsp salt, or to taste
  • 0.5 tsp freshly ground black pepper, or to taste

Instructions

  1. Prep the Steak: Pat the sirloin steaks very dry with paper towels. Season generously all over with salt and freshly ground black pepper. Let them rest at room temperature for 15-30 minutes.
  2. Sear to Perfection: Heat 1 Tbsp olive oil in a heavy-bottomed 10-inch cast iron skillet over high heat until it shimmers and just begins to smoke. Carefully add the steaks and sear for 3-4 minutes per side for a deep brown crust and medium-rare doneness (internal temperature of 130 degrees F (54 degrees C)).
  3. Create Garlic Herb Butter: Reduce the heat to medium. Add 4 Tbsp unsalted butter, minced garlic, and fresh rosemary/thyme sprigs to the pan. Tilt the pan slightly and continuously spoon the fragrant, melted garlic herb butter over the steaks for 1-2 minutes, infusing them with incredible flavor. (If garlic browns too quickly, remove pan from heat briefly.)
  4. Rest & Serve: Transfer the steaks to a cutting board. Tent loosely with foil and let them rest for 5-10 minutes. Slice the top sirloin steak against the grain if desired, and spoon any remaining pan sauce over each serving.

Notes

Always rest the steak after cooking for tenderness, and slice against the grain. Ensure the pan is screaming hot and the steak is very dry for a good crust. Add garlic and herbs after the initial searing to prevent burning. Dairy-free butter or grass-fed sirloin are good swaps.
