  • 45 fresh garlic cloves, smashed
  • 1 large bunch fresh parsley (about 0.5 cup) and 4-5 thyme sprigs
  • 23 dried bay leaves
  • 1 Tablespoon whole black peppercorns
  • 1 Tablespoon apple cider vinegar
  • 1216 cups cold water

Instructions

  1. Roast Bones: Place turkey bones on a large baking sheet and roast at 400°F (200°C) for 20-30 minutes until lightly browned.
  2. Combine All Ingredients: Transfer roasted (or unroasted) bones to a large 8-quart stock pot. Add onions, carrots, celery, garlic, herb greens, peppercorns, and apple cider vinegar.
  3. Cover with Water: Pour enough cold water to fully cover all ingredients by about an inch.
  4. Simmer Gently: Bring the pot to a gentle simmer over medium-high heat, then reduce heat to low. Skim off any foam or impurities. Simmer for 4-6 hours (up to 8 hours) for maximum flavor extraction.
  5. Strain and Cool: Remove the pot from heat. Carefully strain the hot broth through a fine-mesh sieve or cheesecloth into a clean container. Discard all solids. Allow the broth to cool completely before storing.
  6. Chill and Store: Once cooled, refrigerate the stock in airtight containers. Any fat will rise and solidify, which can be easily skimmed off.
