- 1.5 kg beef chuck, cut into 2-cm cubes
- 2 tbsp vegetable oil
- 1 large onion, diced
- 2 carrots, sliced into 1-cm rounds
- 2 celery stalks, sliced
- 3 cloves garlic, minced
- 2 tbsp tomato paste
- 4 cups low-sodium vegetable broth
- 1 cup water
- 2 bay leaves
- 1 tsp dried thyme
- 3 potatoes, peeled and cut into 2-cm cubes
- Salt and pepper to taste
- 3 tbsp unsalted butter
- 1 tbsp white miso paste
- 1 tsp honey
- 0.5 tsp soy sauce
- 1 tbsp toasted sesame seeds
- 2 tbsp chopped scallions
Instructions
- Sear Beef: Dry beef cubes and season with salt and pepper.
- Brown in Batches: Sear beef in batches until caramelized.
- Sauté Aromatics: Sauté onion, carrots, and celery until softened.
- Bloom Tomato Paste: Add garlic and tomato paste; cook until fragrant.
- Combine & Simmer: Return beef, broth, water, bay leaves, and thyme to pot; simmer.
- Long Slow Cook: Simmer covered for 2 hours.
- Add Potatoes: Add potatoes and simmer for 30 minutes until tender.
- Prepare Swirl: Melt butter in a skillet.
- Brown Butter: Cook butter until golden-brown and nutty.
- Emulsify Swirl: Whisk in miso, honey, and soy sauce.
- Finish & Serve: Remove bay leaves and drizzle swirl over stew.
- Garnish & Enjoy: Sprinkle with sesame seeds and scallions.
