Description

This easy vanilla icing recipe creates a beautiful pastel confetti drip effect, perfect for elevating simple cakes for any celebration. It’s a foolproof method designed for stunning, delicious results with minimal effort.

Ingredients

Scale
  • 2 cups powdered sugar, sifted
  • 0.5 cup unsalted butter, softened (or high-quality vegan butter)
  • 2 teaspoons pure vanilla extract
  • 23 tablespoons milk or heavy cream (or unsweetened almond milk)
  • Pinch of salt
  • Gel food coloring
  • Variety of confetti sprinkles

Instructions

  1. Cream Butter: Cream 0.5 cup softened unsalted butter in a stand mixer fitted with the paddle attachment, on medium speed for 2-3 minutes, until light and fluffy and pale.
  2. Gradually Add Sugar: Gradually beat in 2 cups sifted powdered sugar, 1 cup at a time, ensuring full incorporation after each addition. The mixture will become thick and crumbly.
  3. Incorporate Vanilla and Liquid: Add 2 teaspoons pure vanilla extract and the pinch of salt. Slowly drizzle in 2-3 tablespoons milk or cream, 1 tablespoon at a time, mixing until the icing reaches a smooth, spreadable consistency. If too thin, incorporate another tablespoon of sifted powdered sugar.
  4. Tint Icing Colors: Divide the prepared vanilla icing into several small bowls. Tint each with a tiny amount of gel food coloring, using a clean toothpick for each color, mixing thoroughly until soft, uniform pastel shades appear.
  5. Thin for Drip Effect: Thin a portion of each colored icing with an additional 0.5-1 teaspoon of milk or cream, stirring well until it flows smoothly off a spoon but is not watery (test on a glass).
  6. Apply Drip and Flood: Using a small spoon or a squeeze bottle, carefully create drips around the cake’s edge. Let these initial drips set for about 1-2 minutes. Then, flood the top center of the cake with the remaining thinned icing for a smooth, even finish.
  7. Add Confetti Sprinkles: Immediately add confetti sprinkles all over the wet drip and flooded top. Press them gently if needed to ensure they stick before the icing sets completely.

Notes

For a brighter, zesty twist, try adding a touch of lemon zest directly to the finished icing before coloring. Do not overmix once the powdered sugar is added to avoid incorporating excess air bubbles, which can make the icing less smooth. This recipe can be made dairy-free using vegan butter and almond milk.
