  • 2 Tbsp (30ml) apple cider vinegar (or white vinegar)
  • 1 Tbsp (15ml) lemon juice (or more apple cider vinegar)
  • 1 Tbsp (15ml) nutritional yeast
  • 0.25 cup (5g) fresh chives, finely chopped
  • 0.5 cup (120ml) water, plus more as needed
  • 0.5 tsp (2.5g) salt

Instructions

  1. Soak Cashews: Place 1 cup (150g) raw cashews in a heat-safe bowl, cover with boiling water, and let sit for 15-30 minutes until softened. Drain well.
  2. Blend Base Ingredients: Combine soaked cashews, 0.5 cup (120ml) water, 2 Tbsp (30ml) apple cider vinegar, 1 Tbsp (15ml) lemon juice, 1 Tbsp (15ml) nutritional yeast, and 0.5 tsp (2.5g) salt in a high-speed blender. Blend for 3-5 minutes until super smooth and creamy, adding more water 1 tablespoon at a time if needed, to reach a thick, pourable consistency.
  3. Prepare Chive Swirl: Finely chop 0.25 cup (5g) fresh chives until they are uniform in size.
  4. Combine and Swirl: Gently fold about three-quarters of the chopped chives into the creamy base with a spatula. Transfer to a serving bowl and swirl the remaining chives on top for that signature effect.

Notes

For a nut-free version, try soaked sunflower seeds or a firm silken tofu base. For higher protein, use silken tofu or add unflavored plant-based protein powder. For a garlic-herb swirl, add 1 clove of garlic and 1 tsp of dried dill or parsley to the blender. For a spicier kick, blend in 0.25 tsp cayenne pepper. To achieve a thicker dip consistency, use 0.25 cup less water in the blending step. Store extra batches in the fridge for easy meal prep.
