Instructions

  1. Sauté Aromatics: Heat olive oil in a large 10-inch skillet over medium heat. Add diced onion and cook until softened, about 3 minutes. Stir in minced garlic for another minute until fragrant.
  2. Build Flavor: Add sliced mushrooms and shredded carrots to the pot. Sauté until mushrooms release liquid and begin to brown, about 5-7 minutes. Carrots soften slightly, adding beautiful color speckles.
  3. Thicken It Up: Sprinkle all-purpose flour over the vegetables and stir well. Cook for 1 minute, stirring constantly, to remove any raw flour taste. The mixture will become slightly pasty.
  4. Simmer to Perfection: Gradually whisk in vegetable broth, ensuring no lumps. Bring to a simmer, then reduce heat to low. Cook, stirring occasionally, until the gravy thickens, 10-12 minutes. It should coat the back of a spoon.
