- 8 oz (225g) mushrooms (cremini or button)
- 2 medium (150g) carrots, shredded
- 1 small (100g) onion, diced
- 2 cloves garlic, minced
- 4 cups (960ml) vegetable broth, low-sodium
- 0.25 cup (30g) all-purpose flour (or gluten-free flour blend or cornstarch for a gluten-free veggie gravy)
- 2 tbsp (30ml) olive oil (or butter)
- 1 tsp fresh thyme, chopped (or 0.5 tsp dried)
- Salt, to taste
- Freshly Ground Black Pepper, to taste
Instructions
- Sauté Aromatics: Heat olive oil in a large 10-inch skillet over medium heat. Add diced onion and cook until softened, about 3 minutes. Stir in minced garlic for another minute until fragrant.
- Build Flavor: Add sliced mushrooms and shredded carrots to the pot. Sauté until mushrooms release liquid and begin to brown, about 5-7 minutes. Carrots soften slightly, adding beautiful color speckles.
- Thicken It Up: Sprinkle all-purpose flour over the vegetables and stir well. Cook for 1 minute, stirring constantly, to remove any raw flour taste. The mixture will become slightly pasty.
- Simmer to Perfection: Gradually whisk in vegetable broth, ensuring no lumps. Bring to a simmer, then reduce heat to low. Cook, stirring occasionally, until the gravy thickens, 10-12 minutes. It should coat the back of a spoon.
- Season and Serve: Stir in fresh thyme, salt, and pepper to taste. This gravy should be smooth, glossy, and vibrantly golden. Carrots will be tender, holding their shape for lovely speckles.
Notes
Gravy too thin? Mix 1 tbsp cornstarch with 2 tbsp cold water, whisk into simmering gravy, cook for 1-2 minutes until it thickens. Gravy too thick? Whisk in more warm vegetable broth until desired consistency is reached. Gravy bland? Add a dash of soy sauce or vegan Worcestershire for a deeper savory note. For a silky smooth gravy, use an immersion blender before adding herbs.
