- Mix Wet Ingredients: In a separate medium bowl, whisk together 0.5 cup (120ml) olive oil, 2 large eggs, 1.5 cups (360ml) water, and 1 teaspoon vanilla extract. Whisk until the ingredients are smooth and evenly mixed, with a slightly frothy top.
- Combine & Mix: Pour the wet ingredient mixture into the dry ingredients. Mix gently with a whisk or spatula just until combined. A few small lumps are perfectly fine; avoid overmixing. If your batter looks too thin, add 1-2 tablespoons of flour; if it’s too thick, add a splash of water until it reaches a pourable but still substantial consistency.
- Cook Waffles: Ladle about 0.5 to 0.75 cup of batter (depending on your waffle iron size) onto the hot, prepared iron. Close the lid and cook until golden brown and steam stops significantly, which typically takes 3-5 minutes.
