  • 4 ounces cream cheese (113g) or 0.5 cup heavy cream (120ml)
  • 2 cloves garlic, minced (or 1 teaspoon garlic powder)
  • 0.5 teaspoon salt, or to taste
  • 0.25 teaspoon black pepper, freshly ground

Instructions

  1. Prep the Cauliflower: Wash and chop the large head of cauliflower into small, uniform florets (about 1-2 inches).
  2. Cook Until Tender: Place florets in a large pot with an inch of water for steaming, or boil until very tender (10-15 minutes). Drain very well, returning to the hot pot briefly over low heat for 1-2 minutes to evaporate excess moisture.
  3. Blend to Creamy Perfection: Transfer hot, drained cauliflower to a food processor or high-speed blender. Add butter (or oil), cream cheese (or heavy cream), minced garlic, salt, and pepper. Blend while still hot, pulsing until utterly creamy and without lumps.
  4. Taste and Adjust Seasoning: Continue blending until completely smooth and creamy (2-3 minutes). Taste and add more salt, pepper, or garlic powder as needed.
  5. Serve Hot: Transfer creamy whipped cauliflower to a warm serving dish. Garnish with fresh chives or parsley, if desired, and enjoy immediately. If dry, splash in 1–2 tablespoons of hot milk or broth for desired consistency.

Notes

For extra smooth results, blend the cauliflower while it is still hot. If the mixture is too watery, return it to the pot over low heat and stir to cook off excess moisture. If not smooth enough, blend longer and ensure cauliflower was cooked until very tender; add a splash more cream or milk if too thick. Roasting the cauliflower first can enhance the flavor.
