Add 0.25 cup (50g) sugar and 1 tsp (5ml) vanilla extract. Beat on medium-high speed until stiff peaks are achieved (3-5 minutes total); the cream should look thick and hold its shape firmly.

Do not over-whip cream, or it will become grainy and butter-like. Always ensure your coulis is completely cool before adding it to the whipped cream to prevent melting.
