- 30 ml (2 tbsp) Extra-Virgin Olive Oil
- 2 tsp (10 ml) Lemon Zest
- 45 ml (3 tbsp) Fresh Lemon Juice
- 15 ml (1 tbsp) Honey
- 15 ml (1 tbsp) Alcohol-Free Dijon Mustard
- 5 g (1 tsp) Smoked Paprika
- 2.5 g (½ tsp) Ground Cumin
- 10 g (2 cloves) Garlic, Minced
- 5 g (1 tsp) Sea Salt
- 1.25 g (¼ tsp) Black Pepper
- 2.5 g (½ tsp) Red Pepper Flakes (optional)
- 30 g (2 tbsp) Fresh Parsley, Chopped
- 15 g (1 tbsp) Fresh Cilantro, Chopped
- 1 Lemon, Cut into Wedges
Instructions
- Preheat & Prep Pan: Preheat oven to 220°C (425°F). Line a sheet pan with parchment paper.
- Make Lemon Glaze: Whisk olive oil, lemon zest, juice, honey, mustard, paprika, cumin, garlic, salt, pepper, and flakes.
- Coat Chicken: Pat chicken dry, toss with glaze on the sheet pan.
- Bake & Flip: Bake for 18-20 minutes, flipping halfway.
- Check Doneness: Ensure internal temperature reaches 74°C (165°F).
- Rest & Garnish: Rest chicken for 5 minutes, garnish with parsley and cilantro, and serve with lemon wedges.
Notes
For even cooking, ensure chicken is in a single layer on the sheet pan. Marinating for up to 24 hours enhances flavor.
