- 300g (10oz) Cucumber: Thinly sliced half-moons
- 150g (5oz) Red Onion: Thinly sliced rings
- 200g (7oz) Cherry Tomatoes: Halved
- 1 tbsp (15ml) Extra-Virgin Olive Oil (divided)
- 1 tsp (5ml) Rice Vinegar
- ½ tsp (2.5ml) Honey
- ½ tsp (2.5ml) Lemon Juice
- ¼ tsp (1g) Sea Salt (for cucumber and onion)
- ¼ tsp (1g) Black Pepper
- ½ tsp (1g) Sumac, Ground
- 1 tbsp (15g) Toasted Sesame Seeds
- A Handful of Microgreens (≈10g / 0.35oz)
Instructions
- Prepare Vegetables: Wash and slice cucumber, onion, and tomatoes.
- Marinate Cucumber: Combine cucumber, vinegar, honey, salt, and oil.
- Marinate Onion: Combine onion, lemon juice, salt, oil, and sumac.
- Marinate Tomatoes: Toss tomatoes with oil, pepper, and salt.
- Combine & Marinate: Gently combine marinated vegetables.
- Develop Flavors: Marinate covered at room temperature for 20-60 minutes.
- Plate & Garnish: Arrange on a platter and garnish with sesame seeds and microgreens.
Notes
For optimal flavor, marinate at room temperature. Leftovers can be stored in the refrigerator for up to 2 days, but may lose crispness.
