Description
Quick creamy Tuscan-style shrimp in a garlic, sun-dried tomato, and spinach cream sauce. This restaurant-quality meal is ready in about 15 minutes.

- 12 oz jumbo shrimp, peeled and deveined
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil, divided
- 3 tablespoons unsalted butter, divided
- 3 garlic cloves, minced
- 1 shallot, finely diced
- 1/4 cup sun-dried tomatoes, chopped
- 2 cups loosely packed spinach, roughly chopped
- 1/2 teaspoon Italian seasoning
- 1/2 cup chicken stock
- 3/4 cup heavy cream
Instructions
- Step: Peel and devein the shrimp, pat dry with paper towels, and season evenly with salt and black pepper.
- Step: Heat a large skillet over medium-high heat. Add 1 tablespoon olive oil and 1 tablespoon unsalted butter.
- Step: Once the butter is melted and hot, add the shrimp in a single layer and cook for 2 minutes per side until pink and opaque. Transfer the shrimp to a plate and set aside.
- Step: Reduce the heat to medium. Add the remaining 1 tablespoon olive oil and 1 tablespoon unsalted butter to the skillet.
- Step: Add the minced garlic and diced shallot; sauté for 1–2 minutes until fragrant and softened.
- Step: Stir in the Italian seasoning, sun-dried tomatoes, and chopped spinach. Cook for 1–2 minutes until the spinach is wilted.
- Step: Pour in the chicken stock and scrape any browned bits from the bottom of the pan with a wooden spoon or spatula. Bring to a gentle simmer.
- Step: Stir in the heavy cream, reduce heat to medium-low, and simmer for 2–3 minutes until the sauce slightly thickens.
- Step: Add the final tablespoon of unsalted butter and stir until melted and incorporated into the sauce.
- Step: Return the cooked shrimp to the skillet, toss to coat in the sauce, and heat for 1–2 minutes until warmed through. Serve immediately.
Notes
Shallots are small, mild onions found in the produce section. You can substitute with 1/4 cup of finely chopped yellow or white onion. Ensure shrimp are fully thawed and patted dry before searing to achieve the best texture. Nutrition estimates are approximate.
