- ½ cup grated parmesan cheese
- 1 tbsp fresh lemon juice
- 2 cups fresh baby spinach, packed
- ½ cup diced bell peppers
- ½ cup cherry tomatoes, halved
- 1 tsp lemon zest
- 2 tbsp fresh parsley, chopped
Instructions
- Step: Season the salmon fillets with salt, pepper, and garlic powder or Italian seasoning.
- Step: Heat olive oil in a large skillet over medium-high heat, sear salmon for 2 minutes on each side, then remove and set aside.
- Step: Melt butter in the same skillet over medium heat, then sauté minced garlic and shallots for 1-2 minutes.
- Step: Stir in white grape juice or vegetable broth to deglaze the pan, scraping up any browned bits.
- Step: Pour in chicken or vegetable broth and bring to a simmer.
- Step: Stir in orzo pasta and cook for 10 minutes, stirring occasionally, until tender and broth is absorbed.
- Step: Stir in heavy cream, grated parmesan cheese, and fresh lemon juice.
- Step: Return the seared salmon fillets to the skillet and add fresh spinach leaves, cooking for another 2-3 minutes.
- Step: Garnish with chopped parsley and serve.
Notes
For the best results, use salmon fillets of similar size and thickness for even cooking. You can substitute salmon with shrimp or chicken breasts if desired.
