- Start Meringue Base: Place egg whites, cream of tartar, and vanilla extract into your stand mixer’s heatproof bowl, ensuring the bowl is perfectly clean and dry.
- Begin Cooking: Set the bowl over a pot of simmering water (creating a double boiler setup); the bottom of the bowl should not touch the water. Add the hot sugar syrup to the egg white mixture.
- Whisk Over Heat: Whisk constantly and vigorously over the simmering water for exactly 7 minutes. The mixture will become thick, glossy, and form soft, stiff peaks when you lift the whisk.
- Cool and Finish: Remove the bowl from the heat. Continue whisking at high speed with the stand mixer for another 2-3 minutes until the frosting has cooled down and is very firm and holds its shape beautifully.
