Description

These healthy 15-minute Baja shrimp tacos are perfectly spiced and topped with a simple cabbage slaw and cilantro lime crema made from Greek yogurt. Serve them on flour, corn, or almond flour tortillas for an easy gluten-free weeknight meal!

  • 1 pound medium raw shrimp, thawed & peeled
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • ½ tsp ground cumin
  • ¾ tsp salt
  • ½ tsp black pepper
  • 12 tbsp olive oil
  • ⅔ cup shredded green cabbage
  • ⅔ cup shredded red cabbage
  • ⅔ cup shredded carrots
  • 1 cup plain Greek yogurt (0%, 2% or 5%)
  • 12 large garlic cloves, minced
  • ¾ tsp lime zest
  • 12 tbsp lime juice
  • 3 tbsp fresh cilantro, finely diced
  • 1 ½ tsp chili powder
  • ½ tsp paprika
  • ½ tsp ground cumin
  • 8 small flour or corn tortillas
  • ¼ cup chopped red onion
  • ½ cup cotija cheese
  • ¼ cup fresh cilantro, chopped (for garnish)

Instructions

  1. Prep the shrimp: Thaw shrimp if frozen, peel, remove tails, pat dry, and toss in a bowl with spices (not the oil).
  2. Make the crema: Mix all crema ingredients together and set aside.
  3. Make the slaw: Mix cabbages and carrots with about ½ to ⅔ of the cilantro yogurt crema.
  4. Cook the shrimp: Heat olive oil in a large saucepan over medium heat. Add shrimp in a single layer and cook 2 minutes per side until pink and cooked through.
  5. Toast the tortillas: Toast tortillas in a pan or over a gas flame for 10-30 seconds per side until lightly charred.
  6. Assemble: Layer tortillas with slaw, shrimp, red onion, cotija cheese, cilantro, and extra crema.

Notes

Tortillas can be substituted with almond, chickpea, or cassava flour tortillas. Lettuce wraps are a great low-carb alternative. Store shrimp, slaw, and crema in separate containers in the fridge for up to 4 days.
