Ingredients
Scale
- 1 pound medium raw shrimp, thawed & peeled
- 1 tsp chili powder
- 1 tsp garlic powder
- ½ tsp ground cumin
- ¾ tsp salt
- ½ tsp black pepper
- 1 – 2 tbsp olive oil
- ⅔ cup shredded green cabbage
- ⅔ cup shredded red cabbage
- ⅔ cup shredded carrots
- 1 cup plain Greek yogurt (0%, 2% or 5%)
- 1 – 2 large garlic cloves, minced
- ¾ tsp lime zest
- 1 – 2 tbsp lime juice
- 3 tbsp fresh cilantro, finely diced
- 1 ½ tsp chili powder
- ½ tsp paprika
- ½ tsp ground cumin
- 8 small flour or corn tortillas
- ¼ cup chopped red onion
- ½ cup cotija cheese
- ¼ cup fresh cilantro, chopped (for garnish)
Instructions
- Prep the shrimp: Thaw shrimp if frozen, peel, remove tails, pat dry, and toss in a bowl with spices (not the oil).
- Make the crema: Mix all crema ingredients together and set aside.
- Make the slaw: Mix cabbages and carrots with about ½ to ⅔ of the cilantro yogurt crema.
- Cook the shrimp: Heat olive oil in a large saucepan over medium heat. Add shrimp in a single layer and cook 2 minutes per side until pink and cooked through.
- Toast the tortillas: Toast tortillas in a pan or over a gas flame for 10-30 seconds per side until lightly charred.
- Assemble: Layer tortillas with slaw, shrimp, red onion, cotija cheese, cilantro, and extra crema.
Notes
Tortillas can be substituted with almond, chickpea, or cassava flour tortillas. Lettuce wraps are a great low-carb alternative. Store shrimp, slaw, and crema in separate containers in the fridge for up to 4 days.
