BBQ Chicken Grilled Cheese Sandwich

Description

BBQ Chicken Grilled Cheese Sandwiches are the perfect addition to any dinner table. Garlicky buttered french bread is pan-fried to perfection and paired with the savory flavors of BBQ chicken and the oh so creamy, melted Havarti Cheese.


Ingredients

  • 2 tablespoons olive oil
  • 1 small red onion, thinly sliced
  • 3 cloves garlic, minced
  • 2 ½ cups shredded roasted chicken
  • ½ teaspoon paprika
  • 1 teaspoon Worcestershire sauce
  • 1 cup BBQ sauce
  • 12 slices Havarti cheese
  • ¼ cup butter
  • 2 cloves garlic, minced
  • 2 teaspoons parsley, minced
  • 12 slices sourdough bread or sturdy white bread

Instructions

  1. Heat: Heat oil in a large skillet over medium heat.
  2. Sauté Onions: Cook onions until soft, about 2 minutes.
  3. Sauté Garlic: Add garlic and cook until fragrant, about 30 seconds.
  4. Combine Chicken: Add the shredded chicken, smoked paprika, and Worcestershire sauce and bbq sauce.
  5. Cook Mixture: Stir to combine and cook until everything is heated through, about 2-3 minutes.
  6. Prep Butter: Add butter, garlic, and minced parsley in a medium bowl.
  7. Melt Butter: Microwave until melted.
  8. Prepare Bread: Lay 12 slices of bread on work surface.
  9. Butter Bread: Spread melted butter mixture over each piece.
  10. Assemble Base: Turn each piece over and 6 of the bread slices with 6 of the cheese slices and the bbq chicken mixture, dividing evenly.
  11. Finish Assembly: Add the remaining cheese over the top of the chicken and top with the remaining 6 slices of bread (both the bottom and the top should have the buttered side exposed).
  12. Sear: Set buttered sandwiches in a large non-stick skillet.
  13. Brown Bottoms: Place over medium heat and cook until the bottoms of the sandwiches are browned, 3 to 5 minutes.
  14. Brown Tops: Turn sandwiches over, reduce heat to medium-low and continue cooking until the bottom is browned and the cheese is melted, 3 to 5 minutes longer.

Notes

If you choose to do thicker slices of onion, make sure to adjust the cooking time and potentially add additional oil to the pan.
