- 1/2 cup unsalted butter
- 1 tablespoon minced garlic
- 8 large egg yolks
- 2 cups heavy cream
- 1 cup grated Parmesan cheese
- ground black pepper to taste
- salt to taste
Instructions
- Step: Add butter to a large, high-lipped pan, and melt over medium heat.
- Step: In a separate bowl, whisk together the egg yolks and heavy cream.
- Step: Add garlic to the butter, and sautee for 2-3 minutes.
- Step: Once the butter has melted, slowly add the egg mixture to the pan, whisking continuously.
- Step: Continue to whisk for about 5 minutes.
- Step: Stir in the Parmesan cheese, salt, and pepper, letting the Parmesan fully melt. The mixture should thicken and coat the back of a wooden spoon once done.
- Step: Add cooked pasta to the pan and toss to coat. Remove from heat and garnish with additional Parmesan cheese and chopped parsley. Serve immediately.
Notes
If you are a garlic lover, try adding a tablespoon of minced garlic or a teaspoon of garlic powder with the butter. For a heartier meal, stir in grilled or pan-seared chicken breast or sautéed broccoli.
