These restaurant-quality shrimp fajitas are seasoned to perfection and ready in just 30 minutes, making them an ideal quick and flavorful meal.

- 1 tbsp chili powder
- ½ tsp ground cumin
- ½ tsp smoked paprika
- ½ tsp onion powder
- 1 tsp salt
- ½ tsp black pepper
- 1 lb shrimp, extra-large, deveined and peeled
- 4 tbsp olive oil, divided
- 2 cups bell peppers, seeded and cut into strips
- 1 large onion, peeled and cut into strips
- 6 flour tortillas
- 2 tbsp fresh cilantro, chopped
- 2 limes, cut into wedges
- pico de gallo, for garnish
- Cotija cheese, for garnish
- hot sauce, for garnish
Instructions
- Step: In a small bowl, mix together the chili powder, cumin, paprika, onion powder, salt, and pepper.
- Step: Place the shrimp in a large bowl and add 2 tbsp of oil. Stir to coat the shrimp. Add the seasonings and toss to fully coat.
- Step: Heat the remaining 2 tbsp of the oil in a large skillet over medium heat. Add the bell peppers and onion and sauté, stirring often, until they are softened and lightly charred, about 15 minutes. Transfer to a bowl.
- Step: In the same skillet, add the shrimp and cook, stirring often, until no longer pink and cooked through, about 5 to 7 minutes. Set aside.
- Step: Heat a fajita skillet over high heat for about 3 to 5 minutes. Carefully add the onions/peppers to the fajita skillet and then top with the cooked shrimp, or mix the sautéed vegetables with the shrimp in the original skillet.
- Step: Heat the tortillas over a gas flame, on your grill, or in the microwave.
- Step: Garnish with chopped cilantro and a squeeze of fresh lime. Serve at once with all the fixings at the table.
Notes
Ensure you do not overcook the shrimp to keep them tender and juicy. The vegetables can be adjusted to your preferred level of tenderness.
