Instructions
- Step: Pat 1 pound (450 g) of peeled and deveined shrimp dry with paper towels.
- Step: In a small bowl, combine smoked paprika, cayenne pepper, garlic powder, onion powder, dried oregano, dried thyme, salt, and black pepper. Stir well.
- Step: Toss the shrimp in the spice mix until evenly coated.
- Step: Heat 2 tablespoons olive or avocado oil in a large skillet over medium-high heat until shimmering.
- Step: Add shrimp in a single layer and cook for 2-3 minutes on each side, until blackened and just opaque inside. Cook in batches if needed to avoid overcrowding.
- Step: While shrimp cooks, prepare 2 cups cooked rice or quinoa according to package instructions.
- Step: Halve 1 cup cherry tomatoes, shred 1 cup lettuce or baby spinach, slice 1/2 red onion thinly, slice 1 small avocado, and prepare 1/2 cup corn kernels.
- Step: Divide the rice evenly into bowls. Top with blackened shrimp, veggies, and avocado slices.
- Step: Garnish with fresh cilantro, a squeeze of lime, cheese, and a drizzle of dressing if desired.
Notes
Pat shrimp dry to ensure the spice sticks and shrimp sears properly. Cook shrimp in batches to avoid steaming and achieve a crispy blackened crust. Adjust cayenne pepper to control spice level. Reheat shrimp gently in a skillet to maintain crust crispiness.
