Description

This broccoli cheddar quiche features a golden-brown crust cradling a creamy, savory custard with tender, za’atar spiced broccolini and rich cheddar cheese. It’s a versatile, high-protein meal perfect for family dinners, brunch, or healthy meal prep throughout the week.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 0.5 cup unsalted butter, cold & cubed
  • 0.25 cup ice water
  • 0.5 teaspoon fine sea salt
  • 1 large bunch broccolini, trimmed
  • 1 tablespoon olive oil
  • 1 medium shallot, diced
  • 2 cloves garlic, minced
  • 2 teaspoons za’atar seasoning
  • 4 large eggs
  • 1 cup whole milk
  • 1.5 cups sharp cheddar cheese, grated
  • 0.5 teaspoon black pepper
  • 0.25 teaspoon ground nutmeg
  • 0.5 cup plain full-fat yogurt
  • 1 tablespoon lemon juice
  • 1 teaspoon sumac
  • 2 tablespoons sliced almonds, for garnish
  • 2 tablespoons fresh parsley or dill, chopped, for garnish

Instructions

  1. Prepare Oven and Crust: Preheat oven to 375°F (190°C). Have your pre-baked pie crust ready in a 9-inch pie dish; if crust edges brown too quickly, loosely tent with foil.
  2. Sauté Vegetables: Heat olive oil in a large skillet. Sauté diced shallot for 3-4 minutes until soft. Add garlic and broccolini; cook for 5-7 minutes until tender-crisp. Stir in za’atar for 1 minute until fragrant. Let cool.
  3. Whisk Custard: Whisk eggs, milk, salt, pepper, and nutmeg until combined and slightly foamy.
  4. Layer Filling: Sprinkle half of the grated cheddar cheese into the prepared pie crust. Top with the cooled broccolini and shallot mixture evenly.
  5. Finish Assembly: Pour the egg mixture over the vegetables and cheese. Sprinkle the remaining cheddar cheese on top for a golden finish.
  6. Bake Quiche: Bake at 375°F (190°C) for 40-50 minutes. The center should be set, and the top golden brown; a knife inserted should come out clean.
  7. Rest Quiche: Remove quiche from the oven and cool on a wire rack for 20 minutes before slicing. Resting allows the custard to set for clean wedges.
  8. Prepare Drizzle and Garnish: While the quiche rests, whisk yogurt, sumac, and lemon juice. Slice the quiche, drizzle with the yogurt mixture, and garnish with almonds and parsley or dill.

Notes

For a lighter quiche, use reduced-fat cheese or skim milk. Boost fiber by adding more broccolini or other vegetables like spinach or mushrooms. For time-saving, use a store-bought pie crust, pre-chopped frozen broccolini (thawed and drained), and pre-shredded cheese. Store leftover cooked quiche tightly covered in the fridge for up to 3-4 days. To prevent a soggy crust, ensure thorough blind-baking and cooling. Avoid overbaking; remove when the center is just set.
