- 0.5 teaspoon fine sea salt
- 1 large bunch broccolini, trimmed
- 1 tablespoon olive oil
- 1 medium shallot, diced
- 2 cloves garlic, minced
- 2 teaspoons za’atar seasoning
- 4 large eggs
- 1 cup whole milk
- 1.5 cups sharp cheddar cheese, grated
- 0.5 teaspoon black pepper
- 0.25 teaspoon ground nutmeg
- 0.5 cup plain full-fat yogurt
- 1 tablespoon lemon juice
- 1 teaspoon sumac
- 2 tablespoons sliced almonds, for garnish
- 2 tablespoons fresh parsley or dill, chopped, for garnish
Instructions
- Prepare Oven and Crust: Preheat oven to 375°F (190°C). Have your pre-baked pie crust ready in a 9-inch pie dish; if crust edges brown too quickly, loosely tent with foil.
- Sauté Vegetables: Heat olive oil in a large skillet. Sauté diced shallot for 3-4 minutes until soft. Add garlic and broccolini; cook for 5-7 minutes until tender-crisp. Stir in za’atar for 1 minute until fragrant. Let cool.
- Whisk Custard: Whisk eggs, milk, salt, pepper, and nutmeg until combined and slightly foamy.
- Layer Filling: Sprinkle half of the grated cheddar cheese into the prepared pie crust. Top with the cooled broccolini and shallot mixture evenly.
- Finish Assembly: Pour the egg mixture over the vegetables and cheese. Sprinkle the remaining cheddar cheese on top for a golden finish.
- Bake Quiche: Bake at 375°F (190°C) for 40-50 minutes. The center should be set, and the top golden brown; a knife inserted should come out clean.
