Description

This brown sugar syrup recipe is a simple, versatile homemade sweetener that transforms ordinary drinks and desserts into extraordinary treats, featuring a rich molasses aroma with notes of ginger, star anise, and orange.

Ingredients

Scale
  • 1 cup dark brown sugar, packed (200g)
  • 1 cup water (240ml)
  • 10g (1-inch piece) fresh ginger, thinly sliced
  • 2 whole star anise pods
  • Zest from 1 medium orange, divided
  • 1 tablespoon white sesame seeds (15g)
  • 1 teaspoon vanilla extract (optional)
  • Pinch of salt (optional)
  • 1 cinnamon stick (optional)

Instructions

  1. Combine Ingredients: Thoroughly wash the orange. Zest half of the orange directly into a small, heavy-bottomed saucepan using a microplane or fine zester. With a vegetable peeler, carefully remove the remaining zest from the other half in long strips, then finely julienne these ribbons for garnish later. Add the dark brown sugar, water, thinly sliced fresh ginger, and whole star anise pods to the saucepan with the orange zest.
  2. Heat and Stir: Place the saucepan over medium heat. Stir continuously until the brown sugar is fully dissolved and the liquid just begins to steam, which typically takes about 3-5 minutes. The sugar crystals should disappear completely, leaving a clear, cohesive liquid.
  3. Simmer Gently: Bring the mixture to a gentle simmer, where small, consistent bubbles break the surface. Reduce the heat to low and allow it to simmer for 5-7 minutes without stirring much to prevent crystallization, letting the aromas meld and the syrup thicken slightly until it lightly coats the back of a spoon.
  4. Remove and Flavor: Remove the saucepan from the heat. Allow the syrup to steep for at least 20 minutes, or up to an hour for a truly deep flavor infusion. Carefully pour the steeped syrup through a fine-mesh sieve into a clean, heatproof jar or bowl, discarding all the solids.
  5. Cool and Store: Allow the sieved syrup to cool completely to room temperature before serving; it will continue to thicken as it cools. While the syrup cools, toast the white sesame seeds in a small, dry skillet over medium-low heat for 3-5 minutes, stirring frequently until fragrant and lightly golden brown. Transfer them immediately to a small bowl to prevent burning, ready for garnish.

Notes

For a lower-sugar option, use a brown sugar substitute blend and adjust liquid as needed. If the syrup crystallizes, gently reheat with a tablespoon of water until dissolved. If too thin, simmer for 2-3 minutes; if too thick, whisk in a splash of hot water. Store cooled syrup in an airtight container in the refrigerator for up to two weeks.
