Instructions

  1. Prepare Brownie Layer: Preheat oven to 350 F (175 C). Mix brownie batter and spread into a parchment-lined 9×13 inch pan. Bake for 15-20 minutes; edges should look set, center slightly soft.
  2. Make Cheesecake Filling: Beat softened cream cheese with sugar for 2-3 minutes until light and fluffy. Incorporate eggs one at a time, then vanilla extract, until smooth and creamy.
  3. Swirl in Raspberry: Warm raspberries with optional sugar in a small saucepan for 3-5 minutes; berries will soften and smell fruity. Mash slightly to create a chunky sauce.
  4. Combine and Bake: Pour cheesecake filling over par-baked brownie layer. Add raspberry dollops, swirl with knife. Bake at 325 F (160 C) for 35-45 minutes; center should barely jiggle. If edges brown too quickly, gently tent with foil.
