Description
Buffalo Chicken Egg Rolls are filled with a creamy filling of rotisserie chicken, cheddar cheese, mozzarella, buffalo sauce, and ranch seasoning. They are cooked crispy in an air fryer, but can also be fried in oil or baked in the oven.

- 2 cups (280 g) rotisserie chicken, finely diced
- 4 ounces cream cheese, softened
- ¼ cup buffalo sauce
- 1 cup (113 g) sharp cheddar cheese, shredded
- 1 cup (113 g) mozzarella cheese, shredded
- 1 packet (1 ounce / 2 tablespoons) dry ranch seasoning mix
- 8 egg roll wrappers
- water, for assembly
- ranch dressing or blue cheese dressing, for serving
Instructions
- Step: To a large bowl, add chicken, cream cheese, buffalo sauce, cheddar cheese, mozzarella cheese, and ranch seasoning. Stir to completely combine ingredients.
- Step: Working with one wrapper at a time, place ⅓ cup of the chicken mixture onto the center of each wrapper.
- Step: To roll, lightly wet the edges of the wrapper with water. Fold up the bottom corner of the wrapper to cover the filling. Then fold in the right and left corners to the center, pressing lightly to seal. Roll the wrapper tightly until the filling is completely enclosed and the edges are sealed.
- Step: Set the air fryer to 400°F.
- Step: Place the egg rolls into the basket of your air fryer. Spray the tops of the egg rolls with nonstick cooking spray. Air fry the egg rolls for 3-4 minutes. Flip them over, spray again with cooking spray, and air fry for another 3-4 minutes, or until golden brown.
- Step: Serve the egg rolls hot with ranch or blue cheese dressing for dipping and additional buffalo sauce if desired.
Notes
For frying: Heat 2-3 inches of vegetable oil to 365°F and fry for 3 minutes until golden. For baking: Preheat oven to 400°F, spray with oil, and bake for 15-20 minutes. Store refrigerated for 3-4 days or freeze for up to 3 months.
