Description
Buffalo Chicken Mac and Cheese is a baked pasta recipe loaded with crispy popcorn chicken, Buffalo sauce, ranch dressing, cheddar and mozzarella cheese.

- 1 lb frozen popcorn chicken
- 4 cups water
- 2 cups heavy cream (35%MF)
- 1 lb macaroni noodles
- 10.5 oz condensed cheddar cheese soup
- 1 1/2 tablespoon garlic powder
- 1 1/2 tablespoon onion powder
- 1 1/2 teaspoon salt
- 1 1/2 pepper
- 4 cups shredded mozzarella and cheddar cheese blend
- 1 cup Buffalo sauce
- 1/3 cup ranch dressing
Instructions
- Cook: Cook the popcorn chicken according to the directions on the package.
- Preheat: Preheat the oven to 400F.
- Combine: Pour water and heavy cream into a large pot on the stove.
- Boil: Bring the water and cream to a boil.
- Add: Once the liquid is boiling, add the macaroni noodles to the pot.
- Stir: Stir until all of the noodles are submerged in the liquid.
- Simmer: Place a lid on the pot and reduce heat to medium-low.
- Cook: Leave the macaroni to continue cooking, stirring occasionally, for 10 minutes.
- Stir: After 10 minutes, remove the lid and stir well.
- Season: Add the condensed cheddar soup, garlic powder, onion powder, salt and pepper to the pot.
- Combine: Stir until all of the ingredients are fully combined
- Cheese: Add 2 cups of the shredded cheese to the pot and stir well again.
- Transfer: Dump the macaroni and cheese into a greased 9 x 13 inch baking dish.
- Top: Sprinkle the cooked popcorn chicken on top of the mac and cheese.
- Sauce: Pour the Buffalo sauce on top of the popcorn chicken.
- Drizzle: Drizzle the ranch dressing on top of the Buffalo sauce.
- Top: Sprinkle the remaining 2 cups of shredded cheese on top.
- Bake: Place the dish in the oven and bake until the cheese on top is completely melted and just starting to brown around the edges. 16-18 minutes.
- Rest: Remove the dish from the oven and leave the mac and cheese to sit for a few minutes before scooping and serving.
- Serve: Enjoy!
Notes
Use mild Buffalo sauce for a subtle kick or hot sauce if you prefer more heat.
