- 1 lb ground beef
- 1 cup long grain white rice
- 1 can diced tomatoes
- 2 cups beef broth
- 2 cups shredded cheddar cheese
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 tsp paprika
- 1 tsp Italian seasoning
- 1 cup frozen peas
- 1 cup chopped spinach
- 1 cup corn
- 1 cup diced bell pepper
Instructions
- Preheat: Preheat your oven to 350°F (175°C).
- Brown: In a large skillet over medium heat, brown the ground beef with the chopped onion and minced garlic until the beef is no longer pink.
- Drain: Drain excess grease from the skillet.
- Mix: Stir in the diced tomatoes, beef broth, rice, paprika, and Italian seasoning.
- Transfer: Transfer the mixture to a 9×13 baking dish and cover tightly with foil.
- Bake: Bake in the preheated oven for about 30 minutes, or until the rice is tender.
- Cheese: Uncover, sprinkle the reserved cheese on top, and bake for an additional 5-10 minutes, until the cheese is bubbly and golden.
- Rest: Let it rest for 10 minutes before serving.
Notes
Ensure the casserole is covered during most of the baking to keep it moist. Freshly shredded cheddar melts more smoothly than pre-shredded.
