Description
Easy Beef tortilla casserole is a Mexican layered casserole bake with ground beef, tons of beans, taco seasonings, and delicious corn and tomatoes. A super filling weeknight casserole bursting with flavor!

- 1 lb lean ground beef (cooked)
- 1/2 cup chopped onion
- 1 oz taco seasoning packet
- 1 teaspoon oregano
- 15 oz black beans (drained and rinsed)
- 15 oz tomatoes with chilies (Rotel)
- 15 oz corn (drained)
- 15 oz tomato sauce
- 6–8 flour tortillas
- 2 cups shredded cheddar cheese
- fresh cilantro (chopped)
- sour cream
Instructions
- Step 1: Preheat oven to 350 and grease a 9×13 baking pan with nonstick cooking spray. Set aside.
- Step 2: In a large skillet, heat beef and onion until no longer pink. Add taco seasoning and oregano and mix well.
- Step 3: Stir in beans, corn, tomatoes and tomato sauce. Mix well and heat for 5 minutes on medium high or until bubbly. Remove from heat.
- Step 4: Spoon about 1 cup of beef and beans mixture into the bottom of the prepared pan. Add 2 tortillas on top, overlapping to fit into the pan.
- Step 5: Add 1/3 of the ground beef mixture and top with 1/3 of the shredded cheese.
- Step 6: Repeat this twice, ending with cheese on top.
- Step 7: Bake for 15 minutes or until cheese is melted.
- Step 8: Serve topped with fresh cilantro or chopped green onions.
- Step 9: Add sour cream, hot sauce, olives, guacamole or salsa on the side.
Notes
Variations include using bite-sized or shredded chicken instead of beef. For more heat, add diced green chilies or chopped jalapenos.
