Ingredients

Scale
  • 1 pound lean ground beef (or ground turkey/chicken)
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 3 cups cooked white rice
  • 1 can cream of mushroom soup
  • 1 cup milk or vegetable broth
  • 1 cup cheddar cheese, shredded
  • 1 teaspoon paprika
  • Salt to taste
  • Pepper to taste
  • Optional: Parsley for garnish

Instructions

  1. Step: Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. Step: In a large skillet, brown the ground beef with the diced onion for 5-7 minutes until cooked through.
  3. Step: Stir in minced garlic and cook for 30 seconds until fragrant.
  4. Step: In a bowl, whisk together the cream of mushroom soup, milk or vegetable broth, paprika, salt, and pepper.
  5. Step: In the greased dish, combine cooked rice, beef mixture, and half of the cheddar cheese.
  6. Step: Pour sauce over and mix well until evenly coated.
  7. Step: Top with the remaining cheddar cheese, cover with foil, and bake for 20 minutes.
  8. Step: Remove foil and bake for an additional 10 minutes until the cheese is bubbly and golden.
  9. Step: For a crisp finish, broil for 2 minutes, watching closely.
  10. Step: Let cool for 5 minutes before serving, garnished with chopped parsley if desired.

Notes

Use pre-cooked rice for best results. Covering with foil helps keep the casserole moist while baking.
