- 1 small onion, finely chopped (≈¼ cup)
- 1 tbsp olive oil
- 2 tbsp cilantro, chopped
- Zest of 1 lime
- 2 tbsp lime juice
- ½ tsp smoked paprika
- Salt and pepper to taste
- 1 tbsp pumpkin seeds, toasted (≈8g)
Instructions
- Prepare Spread: Combine cottage cheese, cilantro, lime zest, juice, paprika, salt, and pepper.
- Sauté Vegetables: Sauté onion and bell pepper in olive oil until softened.
