Description
Buttery, garlicky, shrimp-y, shrimp scampi recipe is easily the best meal you can cook in 15 minutes or less. Yum! Toss that garlic-butter shrimp with pasta, or grab a fork and dig straight in.
Ingredients
Scale
- 4 tablespoons salted butter
- 2 tablespoons extra-virgin olive oil
- 6 garlic cloves, minced (about 2 tablespoons)
- ¾ cup chicken stock
- ½ teaspoon sea salt
- ½ teaspoon red pepper flakes
- Freshly cracked black pepper, to taste
- 1 ½ pounds large raw shrimp, peeled and deveined
- ¼ cup fresh parsley, chopped
- 2 tablespoons fresh lemon juice
Instructions
- Step: Heat butter and olive oil in a large skillet over medium heat.
- Step: Once the butter has melted, add the garlic and cook, stirring, until fragrant, about 1 minute.
- Step: Stir in the chicken stock and bring to a simmer. Cook until the liquid has reduced by half, about 6 minutes.
- Step: Stir in the salt, red pepper flakes, and black pepper.
- Step: Add the shrimp and cook, stirring occasionally, until pink, opaque, and cooked through, 3 to 4 minutes.
- Step: Stir in the parsley and lemon juice before serving.
Notes
If serving over pasta, add a quarter cup of pasta cooking water to the sautéed mixture to create a richer sauce. You may substitute the chicken stock with a high-quality non-alcoholic citrus broth if desired.
