Description
Delicious garlic butter shrimp scampi made with juicy shrimp, savory vegetable broth, lemon, and fresh parsley for a rich and flavorful dish.
Ingredients
Scale
- 3 tbsp olive oil
- 6 tbsp butter
- 6 garlic cloves, minced
- 1.25 lb shrimp, peeled and deveined (tails on)
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1/4 cup vegetable broth
- 1/2 tsp red pepper flakes
- 2.5 tbsp fresh lemon juice
- 1/4 cup chopped parsley
- 1/4 tsp onion powder
Instructions
- Step: Mince garlic, squeeze lemon juice, prep shrimp, and chop parsley. Keep all ingredients ready.
- Step: Heat olive oil and butter in a skillet over medium-high heat until foamy.
- Step: Add garlic and cook for 30–60 seconds until fragrant, not browned.
- Step: Add shrimp, season with salt and pepper, and cook 1–2 minutes per side until pink.
- Step: Pour in vegetable broth and add red pepper flakes, scraping the pan. Simmer until reduced by half.
- Step: Remove from heat and stir in remaining butter until melted.
- Step: Add lemon juice, onion powder, and parsley, tossing gently to combine.
- Step: Serve immediately with pasta, rice, or crusty bread, spooning sauce over the top.
Notes
Use fresh garlic and lemon juice for best flavor. Do not overcook shrimp; they should remain tender and juicy. Removing the pan from heat before adding butter helps keep the sauce smooth and glossy. Pairs well with pasta, rice, or toasted bread.
