This easy, one-pot Cabbage Soup is a healthy and flavorful blend of fresh cabbage, carrots, celery, onion, and tomatoes. It is a light yet filling meal that is perfect for leftovers and simple to prepare.

- 2 tablespoons oil
- 4 cups chopped green cabbage
- 3 large carrots, peeled and chopped
- 2 ribs celery, finely chopped
- 1 medium onion, finely chopped
- 1 tablespoon tomato paste
- 1 tablespoon Italian seasoning
- 2 cloves garlic, finely minced
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 3 cups vegetable broth
- 1 can diced tomatoes (28oz/798ml)
Instructions
- Step: In a large soup pot, heat oil over medium heat.
- Step: Add cabbage, carrots, celery and onion and cook, stirring often, until onion is translucent, about 5 minutes.
- Step: Add the tomato paste, Italian seasoning, garlic, salt and pepper. Cook and stir for 1-2 minutes.
- Step: Add broth and tomatoes. Bring to a simmer, cover and reduce heat to medium-low.
- Step: Simmer, stirring occasionally, until all vegetables are tender (40-60 minutes, depending on your preferred consistency).
- Step: Season to taste and serve.
Notes
Store in an airtight container in the refrigerator for 4-5 days. This soup freezes well in freezer-safe bags or containers; thaw at room temperature or in cool water before reheating.
