Description
This easy hobo casserole with ground beef, potatoes, onions, cheese, and a creamy soup mixture bakes in one pan for a comforting weeknight dinner. Ten minutes of prep, the oven does the rest.

- 2 pounds ground beef
- 6–8 medium potatoes, thinly sliced (1/4 inch or thinner)
- 1 large onion, sliced into rings
- 1 can (10.5 oz) cream of mushroom soup
- 1/2 cup milk
- 2 cups shredded cheddar cheese
- Salt and pepper to taste
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
Instructions
- Step: Cook ground beef in a large skillet over medium-high heat until no pink remains, about 7–8 minutes, then drain completely.
- Step: Season the beef with salt, pepper, garlic powder, and onion powder.
- Step: Grease a 9×13 baking dish and slice the potatoes and onions.
- Step: In a bowl, mix the cream of mushroom soup with milk until smooth.
- Step: Layer half the potatoes in the baking dish, followed by half the ground beef, half the onions, half the soup mixture, and 1 cup of cheese.
- Step: Repeat the layers with the remaining ingredients, ending with cheese on top.
- Step: Cover tightly with foil and bake at 350°F for 60–75 minutes, until potatoes are fork-tender.
- Step: Remove foil for the last 10 minutes to brown the cheese.
- Step: Let the casserole rest 10 minutes before serving.
