  • 89 cups homemade chicken stock
  • 2 tbsp avocado or olive oil
  • 1 yellow onion
  • 2 long celery ribs
  • 2 medium carrots
  • 4 garlic cloves
  • 23 cups cooked chicken meat
  • salt to taste
  • fresh cracked black pepper to taste
  • 1 tbsp fresh minced parsley
  • 1 tbsp fresh minced dill weed
  • 1/21 lemon, juice only
  • 8 oz wide egg noodles

Instructions

  1. Sauté Vegetables: Preheat a large pot over medium-low heat and add oil, diced onions, celery, and carrots. Cook for 10 minutes until softened, then add garlic and cook until fragrant.
  2. Add Chicken: Stir in the shredded or diced chicken meat.
  3. Simmer: Pour in the chicken stock and season with salt and pepper. Simmer over medium heat for 15 minutes.
  4. Cook Noodles: Add the egg noodles and fresh herbs. Stir and cook until the noodles are tender.
  5. Finish: Stir in the lemon juice and serve warm.

Notes

Store leftovers in an air-tight container in the refrigerator for 3-4 days. For freezing, store the soup without noodles to maintain texture. Gluten-free pasta can be substituted for egg noodles if desired.
