  • 1/2 cup fresh parsley, finely chopped
  • 1 teaspoon lemon zest
  • 2 lb large shrimp, peeled and deveined
  • Red chili flakes (optional)
  • Parmesan cheese (for serving)

Instructions

  1. Step: Cook pasta in a large pot of salted water until al dente. Before draining, reserve 1 cup of starchy pasta water. Drain and set aside.
  2. Step: Pat the shrimp dry with paper towels to ensure proper cooking.
  3. Step: In a wide skillet, melt 2 tablespoons of butter with the olive oil over medium-high heat. Add the shrimp in a single layer and cook for 90 seconds until they turn pink.
  4. Step: Add minced garlic and red pepper flakes. Sauté for 60 seconds until fragrant.
  5. Step: Reduce heat to medium. Pour in lemon juice, lemon zest, and stock. Add 1/2 cup of the reserved pasta water. Simmer for 2 minutes to thicken.
  6. Step: Mix in chopped parsley, salt, and pepper, and check the seasoning.
  7. Step: If the sauce is too thin, stir in the remaining 2 tablespoons of cold butter.
  8. Step: Add the cooked pasta to the skillet and toss for 1–2 minutes over medium heat. Add more pasta water if the dish seems dry.
  9. Step: Serve garnished with fresh parsley, red pepper flakes, and parmesan cheese.

Notes

Do not discard shrimp shells; submerge them in 1/2 cup water and microwave for 2 minutes to create a concentrated, savory stock. Pasta is highly absorbent, so toss with the sauce immediately before serving to maintain a silky, glossy texture.
