Description
Hoosier Stew is Indiana comfort food with fresh green beans, red potatoes, and smoked turkey-based savory links that have simmered in caramelized onions and garlic for an easy dinner recipe.
Ingredients
Scale
- 1 large onion (thinly sliced)
- 2 tablespoons butter
- 2 cloves garlic (minced)
- 1 pound of green beans
- 2 pounds red potatoes (quartered)
- 2 pounds smoked turkey links (cut in half inch pieces)
Instructions
- Step: Place the butter, onions, and garlic in the bottom of a large stock pot on the stove and let them sauté for 20 minutes, until the onions are caramelized and light brown.
- Step: Add potatoes to caramelized onions. Stir to incorporate onions through the potatoes.
- Step: Stir in the green beans and the smoked turkey links.
- Step: Season with salt and pepper to your taste preference.
- Step: Cook for 30-40 minutes over a medium heat or till potatoes are fork tender.
Notes
If desired, you can add 1/2 cup of water to help caramelize the onions faster. The vegetables and poultry links release enough moisture to cook the dish without extra liquid, but you may add vegetable broth if you prefer more of a stew consistency.
