Description

This is a delicious copycat recipe of the famous shrimp taco, featuring crispy fried corn tortillas, seasoned succulent shrimp, and creamy homemade guacamole.


Ingredients

  • 1 pound fresh shrimp, peeled and deveined
  • 2 cups onions, chopped
  • 1 cup Mexican cheese, shredded
  • 1 cup fresh cilantro, chopped
  • ½ cup green onion, shredded
  • limes, juiced
  • Sour cream, to taste
  • Canola oil, for frying
  • 3 avocados
  • Fresh salsa, for serving
  • Onion powder, to taste
  • White corn tortillas
  • 2 tbsp olive oil
  • Old Bay Seasoning, to taste
  • 2 cups tomatoes, diced

Instructions

  1. Prep Shrimp: Remove heads and peel shrimp. Wash in a perforated bowl with cold water, drain, and cut into 1-inch pieces.
  2. Season: Sprinkle shrimp with Old Bay seasoning and onion powder; stir to coat and set aside.
  3. Sauté: Heat olive oil in a skillet over medium-low. Add half the onions, half the tomatoes, and half the cilantro; cook for 1-2 minutes. Add shrimp and cook for 5-7 minutes until orange. Set aside.
  4. Fry Tortillas: Heat canola oil in a deep skillet. Fry tortillas for 30 seconds until soft, fold into shells, and fry until crisp. Drain on paper towels.
  5. Make Guacamole: Combine avocados, green onion, lime juice, onion powder, salt, and remaining onions, cilantro, and tomatoes in a bowl. Grind until smooth.
  6. Assemble: Fill shells with guacamole, shrimp, and sour cream. Top with shredded Mexican cheese, garnish with fresh cilantro, and serve with salsa.

Notes

Ensure the shrimp is fresh for the best flavor. You can mix the vegetables together instead of pureeing if you prefer a chunkier texture.
