  • 6 large Bell Peppers
  • 1 pound Ground Beef
  • 1 cup Brown Rice (uncooked)
  • 1 medium Yellow Onion (chopped)
  • 23 cloves Garlic (minced)
  • 1 can Diced Tomatoes (14.5 oz, undrained)
  • 1 can Tomato Sauce (8 oz)
  • 2 teaspoons Italian Seasoning
  • 1 tablespoon Worcestershire Sauce
  • Salt to taste
  • Black pepper to taste
  • 0.5 cup Shredded Cheese
  • 2 tbsp Fresh chopped parsley

Instructions

  1. Step: Preheat your oven to 375°F (190°C). Wash the bell peppers, remove tops, seeds, and membranes.
  2. Step: In a large skillet, brown the ground beef over medium-high heat. Drain excess grease.
  3. Step: Add chopped onion to the skillet; cook for 3-5 minutes until soft. Stir in minced garlic and cook for 1 minute.
  4. Step: Stir in undrained diced tomatoes, tomato sauce, Italian seasoning, Worcestershire sauce, salt, and pepper. Simmer for 5-10 minutes.
  5. Step: Spoon the mixture into prepared peppers. Arrange upright in a baking dish. Pour 0.5 cup water or broth into the bottom of the dish.
  6. Step: Cover tightly with aluminum foil and bake for 45-60 minutes until peppers are tender and rice is cooked.
  7. Step: Remove foil during the last 10-15 minutes, sprinkle with cheese, and continue to bake until melted.
  8. Step: Let rest for a few minutes and garnish with fresh parsley before serving.

Notes

This recipe is versatile; feel free to adjust seasonings to your taste or substitute ground turkey for beef. Leftovers can be stored in the refrigerator for up to 3-4 days and reheat well.
