- 6 large green bell peppers
- 1 lb ground beef
- 1 cup cooked white rice
- 1/2 cup yellow onion, chopped

- 1 cup tomato sauce

- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1 tsp dried oregano
- 1/2 tsp dried basil
- 1 tbsp olive oil
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1/2 cup water
Instructions
- Step: Wash peppers, remove tops and seeds, and arrange upright in a baking dish.
- Step: Cook onion in olive oil until soft, add garlic, then brown ground beef.
- Step: Stir in tomato paste, tomato sauce, crushed tomatoes, and seasonings and simmer briefly.
- Step: Mix cooked rice into beef mixture until evenly combined.
- Step: Stuff peppers with filling and top with mozzarella and Parmesan.
- Step: Add water to the baking dish and cover tightly with foil.
- Step: Bake at 375 degrees F until peppers are tender, then uncover and finish baking.
- Step: Rest briefly before serving.
Notes
Large, evenly shaped peppers are easiest to stuff. If using very lean beef, add a splash of extra tomato sauce to maintain moisture. Leftovers should be reheated in the oven to preserve the best texture.
