Enjoy Portillo’s Chopped Salad right at home with this copycat recipe featuring a harmonious mix of chopped greens, gorgonzola cheese, pasta, turkey bacon, and chicken, tossed in a tangy house dressing.

- 2 cups cooked chicken, cubed
- 6 slices turkey bacon, cooked
- 2 cups cooked Ditalini pasta
- 2 1/2 cups chopped Romaine lettuce
- 2 1/2 cups chopped iceberg lettuce
- 3 cups chopped red cabbage
- 2 large tomatoes, seeded and diced
- 3 stalks green onion, chopped
- 15 ounces crumbled Gorgonzola cheese
- 1/2 cup olive oil
- 1/4 cup white balsamic vinegar
- 2 cloves garlic, minced
- 1 teaspoon granulated sugar
- 1/2 teaspoon oregano
- 1/4 teaspoon salt
Instructions
- Step 1: Cook chicken, turkey bacon and pasta; rinse the pasta in cold water to stop the cooking process.
- Step 2: Wash, dry and chop the Romaine lettuce, iceberg lettuce and red cabbage.
- Step 3: Seed and dice the tomatoes and chop the green onion.
- Step 4: Combine olive oil, vinegar, garlic, oregano, sugar and salt in a small sealed jar and shake vigorously.
- Step 5: Combine all salad ingredients except the dressing in a large bowl or divide into individual portions.
- Step 6: Serve with the dressing on the side.

For meal prep in 1-quart mason jars, layer ingredients from bottom to top: dressing, tomatoes, green onion, pasta, turkey bacon, gorgonzola cheese, cubed chicken, lettuce, and red cabbage.
