  • 4 Boneless Skinless Chicken Breasts
  • 1 1/2 cups Flour
  • 1 tsp Onion Powder
  • 1 tsp Garlic Powder
  • 1/2 tsp Salt
  • 1 tsp Pepper
  • 1/4 tsp Cayenne Pepper
  • 1 Cup Buttermilk
  • 2 Large Eggs
  • Vegetable Oil for Frying
  • 1/2 cup Butter (salted)
  • 1/4 cup Flour
  • 2 cups Milk
  • 1/2 tsp Salt
  • 1/2 tsp Pepper

Instructions

  1. Step: Pound 4 boneless skinless chicken breasts to approximately 1/4 inch thickness.
  2. Step: In a shallow bowl, mix together 1 1/2 cups flour, 1 tsp onion powder, 1 tsp garlic powder, 1/2 tsp salt, 1 tsp black pepper, and 1/4 tsp cayenne pepper.
  3. Step: In a separate bowl, whisk together 2 eggs and 1 cup buttermilk.
  4. Step: Coat each chicken breast in the flour mixture, then dip into the buttermilk mixture, then back into the flour mixture, pressing to coat completely.
  5. Step: Place the coated chicken on a plate.
  6. Step: Preheat oven to 200°F.
  7. Step: Heat about 1 inch of vegetable oil in a skillet over medium-high heat to 350°F.
  8. Step: Gently place each coated chicken breast into the oil and cook for 2-3 minutes per side until the chicken is lightly golden brown.
  9. Step: Drain the chicken on a plate lined with a paper towel and then place the chicken on a sheet pan in the oven while you fry the remaining chicken breasts.
  10. Step: In a saucepan, melt 1/2 cup butter over medium heat.
  11. Step: Whisk in 1/4 cup flour and cook until combined and lightly browned.
  12. Step: Gradually whisk in 2 cups milk until smooth.
  13. Step: Add 1/2 tsp salt and 1/2 tsp black pepper.
  14. Step: Simmer for 3-5 minutes until thickened.
  15. Step: Ensure chicken reaches 165°F internal temperature.
  16. Step: Serve chicken topped with gravy and enjoy!

Notes

This chicken is best served fresh as it’s crispy and delicious but you can store the leftovers in an airtight container for up to 5 days.
