- 275g puff pastry, all-butter recommended
- 100g cream cheese, softened
- 50g feta cheese, crumbled
- 60g dried cranberries, chopped
- 30g pistachios, toasted and chopped
- 2 Tbsp honey
- 1 tsp orange zest
- 2 Tbsp pomegranate molasses
- 1 Tbsp olive oil, plus extra
- 1 egg, beaten
- Salt and pepper to taste
- Fresh mint leaves for garnish
Instructions
- Preheat Oven: Preheat oven to 200°C (400°F) and line a baking sheet with parchment paper.
- Make Filling: Combine cream cheese, feta, honey, orange zest, salt, and pepper until smooth.
- Add Mix-Ins: Fold in cranberries and pistachios.
- Assemble Pinwheels: Spread filling onto puff pastry, leaving a border. Roll into a log and cut into 12 pinwheels.
- Bake: Brush with egg wash and drizzle with olive oil. Bake for 15-18 minutes until golden brown.
- Drizzle & Garnish: Warm pomegranate molasses and drizzle over pinwheels. Garnish with pistachios and mint.
Notes
For the flakiest pastry, keep all ingredients cold and avoid overworking the dough. Chilling the assembled pinwheels before baking can also improve flakiness.
