- 4 6 oz. each skinless salmon fillets
- 2 tablespoons freshly squeezed lemon juice
- 1 tablespoon olive oil
- 1 tablespoon minced garlic
- 2 tablespoons old style Dijon mustard
- Salt and ground black pepper, to taste
- 1 tablespoon fresh chopped parsley (optional)
- Lemon slices (for serving, optional)
- 2 tablespoons unsalted butter
- 2/3 cup vegetable broth
- 1 x 5 oz. pack of Boursin Garlic & Herbs Cheese (at room temperature)
- 1–2 tablespoons freshly squeezed lemon juice
Instructions
- Step: Preheat your oven to 425°F (220°C) and lightly grease a baking dish.
- Step: Pat the salmon dry with a paper towel. Mix together the lemon juice, olive oil, garlic, and Dijon mustard in a small bowl. Place the fillets in the baking dish and rub with this mixture. Season with a generous pinch of salt and pepper.
- Step: Bake for 10-12 minutes, or until the salmon is cooked through.
- Step: As the salmon bakes, melt butter in a small pot over medium heat.
- Step: Pour the vegetable broth into the mixture and blend in the Boursin until it’s thoroughly incorporated with the stock. Allow it to simmer for a few minutes until the sauce begins to thicken.
- Step: Take off the heat and stir in the lemon juice.
- Step: Drizzle the sauce over the cooked salmon in the dish to combine with the natural pan juices released during baking.
- Step: Garnish with parsley.
- Step: Serve with lemon slices and enjoy!
Notes
Store in the fridge for 2-3 days in a sealed container. Reheat slowly on low heat to keep the sauce stable and the fish moist. This dish does not freeze well due to the dairy in the sauce.
