Description

Easy and delicious homemade Boursin orzo made with 5 ingredients! You will love this hearty meal with its simple flavors, perfect for busy weekdays. This Boursin orzo is like a hug in a bowl, comforting and rich in flavor.


Ingredients

  • 2 cups dried orzo
  • 150 g Boursin cheese
  • 30 g unsalted butter
  • 3 cups baby spinach
  • 3 cups chicken stock
  • Salt and black pepper to taste

Instructions

  1. Step 1: In a large skillet, add butter and melt on medium heat
  2. Step 2: Add dried orzo to the melted butter, stir and toast for about 1-2 minutes
  3. Step 3: Stir in chicken stock over the toasted orzo, season with salt and black pepper if using, and bring to a boil until the orzo is al dente.
  4. Step 4: Add Boursin cheese to the cooked orzo and stir until well incorporated and creamy.
  5. Step 5: Add some baby spinach and let it wilt as you stir, test the seasoning, turn off the heat and serve immediately.

Notes

Store in the fridge in an airtight container for up to 3 days. To reheat, add a splash of water or milk and warm in a saucepan on medium-low heat or in the microwave. Vegetable stock can be used as a substitute for chicken stock.
