- 1 pound broccoli, cut into florets
- Water
- 2 tablespoons butter
- 2 tablespoons flour
- 1 cup milk
- 2/3 cup shredded cheddar cheese
- 2 tablespoons grated Parmesan cheese
- 1/4 teaspoon kosher salt
- Pinch ground mustard (optional)
- Pinch cayenne (optional)
Instructions
- Steam: Place the broccoli in a large saucepan, cover with about 1 cup of water, simmer 4 to 5 minutes until bright green and crisp-tender, then drain and keep warm.
- Roux: Wipe the pan dry, melt butter over medium-low, sprinkle in flour and whisk for 1 minute until golden.
- Thicken: Slowly pour in milk, whisking constantly, and simmer for about 3 minutes until the sauce thickens.
- Combine: Reduce heat to low, whisk in cheddar cheese gradually, stir in Parmesan, salt, mustard, and cayenne, then serve over broccoli or stir together.
Notes
Store in an airtight container in the refrigerator for up to 4 days. Reheat in a skillet or microwave. Freeze for up to 3 months.
