- 1 tbsp Olive oil
- 1 tbsp Butter
- 0.5 medium onion, chopped fine
- 2 cups Broccoli florets, bite-sized
- 3 cloves Garlic, minced
- 0.5 tsp Italian seasoning
- 1 cup Orzo pasta, uncooked
- 2 cups Chicken broth
- 1 cup Heavy cream (or whipping cream)
- 1 tsp Worcestershire sauce
- 2 cups Shredded chicken, cooked
- 2 cups Sharp cheddar cheese (microbial-rennet), shredded
- Salt and pepper to taste
Instructions
- Step 1: Heat olive oil and butter in a large skillet or pressure cooker pot over medium heat.
- Step 2: Add chopped onion and cook for 3-4 minutes until softened.
- Step 3: Add broccoli florets and stir for 2-3 minutes until bright green.
- Step 4: Add garlic and Italian seasoning; cook for about 30 seconds until fragrant.
- Step 5: Stir in orzo pasta and toast for 1-2 minutes while stirring constantly.
- Step 6: Pour in chicken broth, heavy cream, and Worcestershire sauce. Stir to combine.
- Step 7: Bring to a simmer, then pressure cook on high for 6 minutes followed by a 10-minute natural release.
- Step 8: If sauce is thin, simmer uncovered for a couple minutes to thicken.
- Step 9: Stir in shredded chicken, season with salt and pepper, and serve hot.
Notes
Leftovers can be kept in airtight containers for up to 4 days or frozen for later use. Reheat with a splash of broth or cream to restore creaminess.
