Creamy Copycat Chicken Scampi Pasta

Description

Olive Garden Chicken Scampi is a hearty pasta with colorful bell peppers, red onions and crispy chicken tenders, all served in a creamy sauce with fresh herbs and garlic.


Ingredients

  • 2 tbsp olive oil
  • 2 lbs chicken tenders
  • 1 cup flour
  • 2 tbsp Italian seasoning
  • 1 tbsp salt
  • 1 tsp black pepper
  • 1 lb angel hair pasta, cooked al dente
  • 1 tbsp olive oil
  • 1 red bell pepper, sliced into thin strips
  • 1 yellow bell pepper, sliced into thin strips
  • 1 green bell pepper, sliced into thin strips
  • 1 red onion, sliced into thin strips
  • 3 tbsp butter
  • 5 cloves garlic, minced
  • 2 cups chicken broth
  • 2/3 cup heavy cream
  • 1 tsp Italian seasoning
  • 1 tsp salt
  • Grated Parmesan cheese
  • Finely chopped fresh basil
  • Finely chopped fresh parsley

Instructions

  1. Prepare Dredge: In a large shallow dish, combine flour, salt, pepper and Italian seasoning.
  2. Coat Chicken: Coat the chicken tenders in the flour mixture and shake off the excess.
  3. Pan Fry: Heat 2 tbsp oil in a large skillet over medium high heat and fry chicken 2-3 minutes per side until cooked through.
  4. Cook Pasta: Boil angel hair pasta until al dente, reserve one cup of pasta water, and drain.
  5. Sauté Veggies: Wipe skillet clean, add 1 tbsp oil, and sauté sliced peppers and red onion for 3-4 minutes.
  6. Add Aromatics: Stir in butter and minced garlic and fry for 1-2 minutes until tender.
  7. Deglaze: Pour in chicken broth and cook on medium heat for 2 minutes.
  8. Finish Sauce: Stir in cream, salt and Italian seasoning, then bring to a light boil.
  9. Combine: Reduce heat to low, add cooked pasta, and mix for 1-2 minutes.
  10. Garnish: Top pasta with cooked chicken and garnish with Parmesan cheese, fresh basil and parsley.

Notes

For a vegetarian version, replace chicken with sliced Portobello mushrooms. For a gluten-free version, use gluten-free flour and pasta.
