Description
Olive Garden Chicken Scampi is a hearty pasta with colorful bell peppers, red onions and crispy chicken tenders, all served in a creamy sauce with fresh herbs and garlic.

- 2 tbsp olive oil
- 2 lbs chicken tenders
- 1 cup flour
- 2 tbsp Italian seasoning
- 1 tbsp salt
- 1 tsp black pepper
- 1 lb angel hair pasta, cooked al dente
- 1 tbsp olive oil
- 1 red bell pepper, sliced into thin strips
- 1 yellow bell pepper, sliced into thin strips
- 1 green bell pepper, sliced into thin strips
- 1 red onion, sliced into thin strips
- 3 tbsp butter
- 5 cloves garlic, minced
- 2 cups chicken broth
- 2/3 cup heavy cream
- 1 tsp Italian seasoning
- 1 tsp salt
- Grated Parmesan cheese
- Finely chopped fresh basil
- Finely chopped fresh parsley
Instructions
- Prepare Dredge: In a large shallow dish, combine flour, salt, pepper and Italian seasoning.
- Coat Chicken: Coat the chicken tenders in the flour mixture and shake off the excess.
- Pan Fry: Heat 2 tbsp oil in a large skillet over medium high heat and fry chicken 2-3 minutes per side until cooked through.
- Cook Pasta: Boil angel hair pasta until al dente, reserve one cup of pasta water, and drain.
- Sauté Veggies: Wipe skillet clean, add 1 tbsp oil, and sauté sliced peppers and red onion for 3-4 minutes.
- Add Aromatics: Stir in butter and minced garlic and fry for 1-2 minutes until tender.
- Deglaze: Pour in chicken broth and cook on medium heat for 2 minutes.
- Finish Sauce: Stir in cream, salt and Italian seasoning, then bring to a light boil.
- Combine: Reduce heat to low, add cooked pasta, and mix for 1-2 minutes.
- Garnish: Top pasta with cooked chicken and garnish with Parmesan cheese, fresh basil and parsley.
Notes
For a vegetarian version, replace chicken with sliced Portobello mushrooms. For a gluten-free version, use gluten-free flour and pasta.
